Because it's canon and so very, very underloved.
I mean, really, it got less screen-time than Carl/Ellie to develop and I already felt the dynamic between Marlin and Coral was very well-constructed and natural. It was like peeking into the lives of two people who'd been in love a long while and it felt right.
I was discussing Up with my older brother a while ago, and what appealed to me so much in it. One of the points I brought up was that I wished Marlin had shown some small sign of mourning about his wife during the course of the film, like Carl. I'd wanted to see a scene, however small, of Marlin mentioning or alluding to her somehow. And my brother said something that really struck me, "Coral's whole world was their children, so that's how Marlin honors her memory: by being a good father." (there was more to it, but I'm pretty tired so I can't remember it all)
Nemo looks a lot like his mom...which must really eat at Marlin, when you think about it.

You know, except for the gimpy arm. Although Marlin loves that gimpy arm...
Anyways, I believe that how he mourns Corals death was by being overprotective of Nemo. And when he learned to let go was when he learned to let go of Coral. Kind of. He just wasn't clinging on so much, and he learned life goes on. Now, I'm perfectly fine with someone never re-marrying and not loving someone other then their wife, and I feel that's the same story with Marlin. And I is coo' wit dat.
They are an adorable couple though- and I love Coral a lot. I named a character of mine after her, I just love her that much,
